That question has taken me from a gelato kitchen in Chennai to the European Food Safety Authority in Italy, and now to California, where I study what makes food feel delicious.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-f04f0fe elementor-widget elementor-widget-text-editor\" data-id=\"f04f0fe\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Along the way, I launched India&#8217;s first layered ice cream pastry and ran a pilot gelato plant making 800 litres a week. I also co-authored nine EFSA scientific opinions on food additives and flavorings and kept 150+ confectionery products safe and fresh on store shelves managing food supply chain and safety at Vairam Agencies. Currently at IC Foods, I&#8217;m building an AI-ready food ontology that turns how people experience deliciousness into data that can shape new products.
